MERRY CHRISTMAS!

Christmas Eve, there was a brief discussion among some of my kids about whether we should sleep under the tree. We had just returned from our churches annual Christmas Eve service. Wyatt was playing piano, some of the kids were playing their newest game, Head Bands, and I decided to relax on the recliner and bask in the moment. I woke up around 3:30 am. Still in my church clothes and still wearing my boots.


I am proud to let you know that Jed and I were the only ones to sleep under/next to the tree last night. Does anyone else deprive themselves of a good night’s sleep on Christmas Eve by sleeping under the tree?

Since I was awake, I decided to go wish the animals a Merry Christmas. The pigs received a full bucket of milk this morning. They love them some milk! The ‘flerd’ (flock/herd) of sheep and cows are finding minimal grass in the pasture these days. So I took them a few bales of hay, which they were grateful for. The temperature was above freezing, so I didn’t need to carry any water or break any ice in the stock tanks…bonus!

Then I went to check on the hens. Our laying hens are inside for the winter. I opened their nesting boxes and checked that they had water and feed. Located next to our hens are a new batch of juvenile chickens. They are 9 weeks old. These girls will be for sale in February and should begin laying eggs by March. Keep us in mind if you’re interested in chickens in the spring:)

With the morning chores finished, I returned to the house, added a few logs to the woodstove, and got cleaned up.

8:30 PM

It’s been a good day. My wife and boys opened gifts this morning. We then went to my wife’s aunt’s place, who lives right across the road, for brunch. After a great meal, we sang some Christmas songs, and soon after, I must have fallen asleep on a recliner. We went back home early in the afternoon, and my parents stopped by for a bit. Always good to see them.

Roasted Harvest Bowl

1. Prep the Vegetables

  • Acorn Squash: Slice into half-moons (skin on is fine!).
  • Celeriac: Peel the tough outer skin and cut into 1-inch cubes.
  • French Breakfast Radishes: Halve them lengthwise.
  • Bok Choy & Spinach: Wash thoroughly; slice the Bok Choy stems and keep the leaves whole.

2. Roast the Hearty Base

Toss the Acorn Squash and Celeriac in olive oil, salt, and pepper. Roast at 400°F (200°C) for 25-30 minutes until tender and browned at the edges.

3. The Quick Sauté

While the squash roasts, heat a pan with a little oil. Sauté the Bok Choy stems and French Breakfast Radishes for 3-4 minutes. The radishes become surprisingly mellow and juicy when cooked. Toss in the Spinach and Bok Choy leaves at the very end just until wilted.

4. Assemble and Glaze

Combine the roasted and sautéed vegetables in a large bowl. Drizzle with a simple dressing of soy sauce, toasted sesame oil, and a squeeze of lime or honey.
