Roasted Beet & Potato Bowl with Arugula-Kale Pesto and Heirloom Tomatoes

Serves: 4
Prep Time: 20 minutes
Cook Time: 35 minutes


Ingredients

For the Roasted Vegetables:

  • 3 medium white potatoes, cubed
  • 2 medium red beets, peeled and diced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional, adds depth)

For the Pesto:

  • 1 cup arugula
  • 1 cup kale, stems removed
  • 1 clove garlic
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • ¼ cup parmesan cheese (or nutritional yeast for dairy-free)
  • Salt and pepper to taste

For Serving:

  • 2–3 heirloom tomatoes, sliced or chopped
  • Optional toppings: toasted walnuts, feta cheese, balsamic glaze

Instructions

  1. Roast the Veggies
    • Preheat oven to 425°F (220°C).
    • On a parchment-lined baking sheet, toss potatoes and beets with olive oil, salt, pepper, and smoked paprika.
    • Roast for 30–35 minutes, flipping halfway through, until tender and golden on the edges.
  2. Make the Pesto
    • In a food processor or blender, combine arugula, kale, garlic, lemon juice, parmesan, and a pinch of salt.
    • Pulse while slowly streaming in olive oil until smooth.
    • Taste and adjust seasoning.
  3. Assemble the Bowls
    • Divide roasted potatoes and beets among bowls.
    • Top with heirloom tomatoes.
    • Drizzle generously with arugula-kale pesto.
    • Finish with optional feta, toasted nuts, or balsamic glaze for extra texture and flavor.

Serving Suggestion

Serve warm as a hearty vegetarian main or alongside grilled chicken or salmon. Excellent with a slice of crusty sourdough bread to mop up the pesto!

Our delivery schedule for the week of Thanksgiving has been set. You will be able to view your specific delivery day when you log into your account. We will combine all deliveries into two days, Tuesday and Wednesday. We’ll have a few extra trucks to make this happen.

  • Regular Tuesday and Wednesday Delivery Routes will be as usual.
  • Regular Thursday Delivery Routes will be divided between Tuesday and Wednesday. (Log into your account to see which day your delivery is scheduled)
  • Regular Friday Delivery Routes will be on Wednesday.
