Honey-Roasted Harvest Salad

This recipe uses the sweetness of the squash and carrots to balance the earthy flavor of the sprouts, finished with a bright cilantro vinaigrette.

Ingredients

  • Butternut Squash: 1 small, peeled and cubed
  • Carrots: 3-4 medium, sliced into rounds
  • Brussel Sprouts: 1 lb, halved
  • Green Leaf Lettuce: 1 head, washed and torn
  • Cilantro: ¼ cup, finely chopped (for dressing/garnish)
  • Pantry Staples: Olive oil, honey (or maple syrup), salt, pepper, and apple cider vinegar.

Instructions

  1. Roast the Vegetables: Toss the Butternut Squash, Carrots, and Brussel Sprouts with olive oil, salt, pepper, and a drizzle of honey. Spread on a baking sheet and roast at 400°F for 25–30 minutes until tender and caramelized.
  2. Make the Dressing: Whisk together 3 tablespoons of olive oil, 1 tablespoon of apple cider vinegar, and half of your chopped Cilantro.
  3. Assemble: Place the Green Leaf Lettuce in a large bowl. Top with the warm roasted vegetables.
  4. Finish: Drizzle the dressing over the top and garnish with the remaining fresh Cilantro.
