Honey-Roasted Harvest Salad
This recipe uses the sweetness of the squash and carrots to balance the earthy flavor of the sprouts, finished with a bright cilantro vinaigrette.
Ingredients
- Butternut Squash: 1 small, peeled and cubed
- Carrots: 3-4 medium, sliced into rounds
- Brussel Sprouts: 1 lb, halved
- Green Leaf Lettuce: 1 head, washed and torn
- Cilantro: ¼ cup, finely chopped (for dressing/garnish)
- Pantry Staples: Olive oil, honey (or maple syrup), salt, pepper, and apple cider vinegar.
