Roasted Root & Cabbage Grain Bowl

Ingredients

  • From your list: Red Beets, Rutabagas, Yellow Onions, Green Cabbage, and Salad Mix.
  • Pantry Staples: Olive oil, salt, black pepper, and your choice of grain (quinoa, farro, or brown rice).
  • Optional Dressing: Apple cider vinegar, dijon mustard, and a touch of honey.

Instructions

  1. Prep the Veggies: Peel the rutabagas and red beets, then cut them into 1-inch cubes. Slice the yellow onions into thick wedges and shred about 2 cups of the green cabbage.
  2. Roast: Toss the beets, rutabagas, and onions with olive oil, salt, and pepper. Spread them on a baking sheet and roast at 400°F for 20 minutes.
  3. Add Cabbage: Add the shredded cabbage to the sheet pan, toss slightly, and roast for another 15 minutes until the root vegetables are tender and the cabbage is slightly charred.
  4. Assemble: Place a generous handful of the salad mix in a bowl. Top with a scoop of cooked grains and a large portion of the roasted vegetable medley.
  5. Finish: Drizzle with a simple vinaigrette or a squeeze of lemon.
