Roasted Harvest Salad with Peppery Greens
Ingredients
- Red Potatoes (diced into 1-inch cubes)
- Hakurei Turnips (quartered; they roast beautifully and become very sweet)
- Delicata Squash (sliced into half-moons, seeds removed—no need to peel!)
- Kale (stems removed, leaves torn into bite-sized pieces)
- Arugula (used fresh for a peppery finish)
- Pantry Staples: Olive oil, salt, pepper, and your favorite balsamic vinaigrette or lemon juice.
Instructions
- Roast the Vegetables: Preheat your oven to 400°F. Toss the Red Potatoes, Hakurei Turnips, and Delicata Squash with olive oil, salt, and pepper on a large baking sheet. Roast for 25–30 minutes until golden brown and tender.
- Massage the Kale: While the veggies roast, place the Kale in a large bowl with a drizzle of olive oil and a pinch of salt. Massage the leaves with your hands for 1–2 minutes until they soften and turn dark green.
- Wilt & Combine: When the roasted vegetables are done, pull them from the oven. While they are still warm, toss them directly into the bowl with the kale. The heat will slightly wilt the kale further.
- The Fresh Finish: Fold in the fresh Arugula right before serving so it stays crisp.
- Dress: Drizzle with a balsamic glaze or a simple lemon-tahini dressing to tie the earthy flavors together.
Tips for these ingredients:
- Delicata Squash: Unlike other winter squash, the skin is thin and edible, making it much faster to prep.
- Hakurei Turnips: These are “salad turnips.”
They don’t have the bite of a purple-top turnip and are delicious both raw and roasted.
