Roasted Acorn Squash & Leek Bowl with Watermelon Radish Crunch

Serves: 4

Total Time: 50 minutes


Ingredients

  • 1 medium acorn squash, halved, seeded, and sliced into wedges
  • 2 leeks, trimmed, washed, and sliced into thin rounds
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 2 watermelon radishes, thinly sliced
  • 3 tbsp olive oil, divided
  • 1 tbsp maple syrup or honey
  • 1 tsp smoked paprika
  • Salt & black pepper to taste
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & pepper to taste

Instructions

  1. Roast the Squash & Leeks
    • Preheat oven to 400°F (200°C).
    • On a baking sheet, toss the acorn squash wedges and leek slices with 2 tbsp olive oil, maple syrup, smoked paprika, salt, and pepper.
    • Roast for 25–30 minutes, flipping halfway through, until squash is tender and caramelized.
  2. Blanch the Broccoli
    • Bring a pot of salted water to a boil. Add broccoli florets and cook for 2–3 minutes, until bright green.
    • Drain and immediately plunge into cold water to stop cooking.
  3. Prepare the Dressing
    • Whisk together olive oil, apple cider vinegar, Dijon, honey, salt, and pepper in a small bowl.
  4. Assemble the Bowl
    • Layer fresh spinach on the bottom of each bowl.
    • Add roasted squash and leeks, blanched broccoli, and slices of watermelon radish on top.
    • Drizzle with the dressing before serving.

Optional Toppings

  • Toasted pumpkin seeds or walnuts
  • Crumbled feta or goat cheese
  • A sprinkle of red pepper flakes for heat
