Roasted Parsnip & Broccoli Salad with Cilantro-Lime Dressing
Ingredients
- From your Share: Broccoli (cut into florets), Parsnips (peeled and sliced into rounds), Yellow Onion (sliced into wedges), and a handful of fresh Cilantro.
- Pantry Staples: Olive oil, salt, pepper, and one lime (or lemon).
Instructions
- Roast the Vegetables: Preheat your oven to 200°C (400°F). Toss the broccoli, parsnips, and onions in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20–25 minutes until the parsnips are tender and the broccoli edges are crispy.
- Prepare the Base: While the vegetables roast, wash and tear the Romaine Lettuce into bite-sized pieces and place them in a large bowl.
- Make the Dressing: Finely chop the cilantro and whisk it with 3 tablespoons of olive oil and the juice of one lime.
- Assemble: Add the warm roasted vegetables to the bowl of Romaine. Toss gently with the cilantro dressing so the lettuce wilts just slightly from the heat.
- Serve: Enjoy as a hearty side dish or a light lunch. For a sweet contrast, you can slice up one of the Pears from your Fruit Box and toss it in at the end!
