Crunchy Kohlrabi & Apple Slaw
Prep time: 20 minutes | Serves: 4
The Base (The Crunch)
- Kohlrabi: 1 bulb, peeled and julienned (cut into matchsticks).
- Gala Apple: 1 large, julienned (keep the skin on for color).
- Green Cabbage: 2 cups, thinly shredded.
- Sugar Snap Peas: 1 cup, sliced thinly on the diagonal.
- Red Leaf Lettuce: 1 head, torn into bite-sized pieces (to serve as the bed).
The Sweet Additions
- Red Grapes: 1 cup, halved.
- Strawberries: 1 cup, hulled and sliced.
The Zesty Garlic-Citrus Dressing
- Garlic: 1-2 cloves, finely minced or pasted.
- Lemon & Lime: Juice of half a lemon and a full lime (roughly 3 tbsp total).
- Optional: 3 tbsp Olive oil, 1 tsp honey (to balance the lime), and a pinch of salt/pepper.
Instructions
- Prep the Dressing: In a small jar, combine the minced garlic, lemon juice, and lime juice. If you have olive oil and honey on hand, add those too. Shake well and let it sit for 5 minutes; the citrus juice will “mellow” the raw garlic bite.
- Macerate the Fruit: Toss the sliced strawberries and apples in a small bowl with a teaspoon of the dressing. This prevents the apples from browning and draws out the strawberry juice to enrich the dressing.
- Build the Slaw: In a large mixing bowl, toss the kohlrabi, cabbage, and sugar snap peas. Pour the remaining dressing over the vegetables and toss thoroughly.
- The Mix-In: Gently fold in the grapes and the strawberry/apple mixture.
- Serve: Line a large platter or individual bowls with the red leaf lettuce and pile the slaw high in the center.
Tips for this Recipe
- Texture: Kohlrabi tastes like a mild, sweet broccoli stem. Cutting it into thin matchsticks ensures it isn’t too “woody” to eat raw.
- Storage: If you aren’t eating this immediately, wait to add the strawberries and lettuce until right before serving so they don’t get soggy.
