Rustic Farmhouse Vegetable Hash
This versatile dish works as a hearty breakfast topped with an egg, or as a savory side dish for dinner.

Ingredients
- Red Potatoes: Diced into 1/2-inch cubes (keep the skins on for texture!)
- Carrots: Peeled and sliced into thin rounds.
- Collard Greens: Stems removed, leaves chopped into ribbons.
- Spinach: Roughly chopped.
- Red Grape Tomatoes: Halved.
- Pantry Staples: Olive oil, salt, pepper, and optionally a pinch of red pepper flakes or garlic powder.
Instructions
- Crisp the Potatoes & Carrots: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced Red Potatoes and Carrots. Season with salt and pepper. Cook, stirring occasionally, for about 12–15 minutes until the potatoes are golden-brown and tender.
- Sauté the Hearty Greens: Lower the heat to medium. Toss in the Collard Greens. Since collards are heartier than spinach, they need a few minutes to soften. Sauté for 3–5 minutes until they turn bright green and begin to wilt.
- Blister the Tomatoes: Add the Red Grape Tomatoes to the pan. Cook for 2 minutes until they just begin to soften and release their juices, which will create a light “sauce” for the hash.
- Fold in the Spinach: Finally, add the Spinach. Fold it into the warm mixture for just 60 seconds until it wilts.
- Finish & Serve: Taste and add an extra pinch of salt or a squeeze of lemon if you have it.
Tip: If you want to make this a full meal, crack two eggs directly over the hash in the final 4 minutes of cooking and cover the pan with a lid until the whites are set.
