Spring Harvest Roasted Salad with Strawberry-Lime Vinaigrette

This dish brings together the earthiness of the roasted root vegetables with the bright, seasonal sweetness of the fruit.


Ingredients

  • From the Farm Share:
    • Baby Rainbow Carrots (Trimmed and scrubbed)
    • Sweet Potatoes (Peeled and cubed)
    • Salad Mix (The base)
    • Spring Onions (Thinly sliced)
    • Parsley (Finely chopped)
  • From the Fruit Box:
    • Strawberries (Sliced)
    • Evercrisp Apple (Thinly sliced)
    • Limes (Juiced for the dressing)
  • Pantry Staples: Olive oil, honey, salt, and pepper.

Instructions

  1. Roast the Vegetables: Preheat your oven to 400°F. Toss the Baby Rainbow Carrots and cubed Sweet Potatoes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20–25 minutes until tender and slightly caramelized. Let them cool slightly.
  2. Make the Vinaigrette: In a small jar, whisk together the juice of one Lime, 3 tablespoons of olive oil, 1 teaspoon of honey, and half of your chopped Parsley.
  3. Assemble the Salad: In a large bowl, toss the Salad Mix with a light drizzle of the dressing.
  4. Top & Garnish: Add the roasted carrots and sweet potatoes, the sliced Evercrisp Apple, and the Strawberries.
  5. Final Touch: Sprinkle the sliced Spring Onions and the remaining Parsley over the top. Drizzle with the remaining vinaigrette just before serving.


What about the Pears?

Since the Pears might need a day or two to ripen further, they make a perfect dessert. You can slice them and enjoy them fresh, or sauté them in a little butter and honey for a warm treat later in the week!
