1. Summer Heirloom Tomato & Plum Salad

The natural sweetness of ripe plums pairs beautifully with the savory, rich flavor of heirloom tomatoes and fresh basil.

  • Ingredients: Heirloom tomatoes (sliced or wedged), Plums (pitted and sliced), fresh Basil leaves (torn), a drizzle of olive oil, a splash of lime juice, salt, and cracked black pepper.
  • How to make it: Toss the tomatoes and plums together on a platter. Scatter the fresh basil leaves over the top. Drizzle generously with good olive oil and a squeeze of fresh lime juice to brighten the flavors. Season with salt and pepper to taste.
  • Optional twist: Add some crumbled feta or fresh mozzarella if you have it on hand.

2. Sheet Pan Roasted Sweet Potatoes & Carrots

A simple, comforting side dish that highlights the natural sweetness of root vegetables, cut with a hint of citrus.

  • Ingredients: Sweet Potatoes (peeled and cubed), Carrots (sliced into rounds or coins), Celery (sliced), olive oil, salt, pepper, and a squeeze of lime.
  • How to make it: Preheat your oven to 400°F. Toss the cubed sweet potatoes, carrots, and celery in a bowl with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet. Roast for 25–30 minutes, stirring halfway through, until the potatoes and carrots are tender and slightly caramelized. Finish with a quick squeeze of fresh lime juice right out of the oven.

3. Fresh Blackberry & Grape Fruit Salsa

A vibrant, sweet-and-tart salsa that works great as a topping for grilled meats, fish, or just eaten with tortilla chips.

  • Ingredients: Blackberries (halved), Red Grapes (quartered), Celery (finely diced for crunch), fresh Basil (finely chopped), and Lime juice.
  • How to make it: Combine the blackberries, grapes, and finely diced celery in a small bowl. Toss with the chopped basil and a generous squeeze of lime juice. Let it sit for about 10 minutes before serving so the flavors meld
