1. Roasted Potato Salad with Fresh Dill & Cucumber Yogurt Sauce
A light, herb-forward twist on traditional potato salad using crispy roasted potatoes instead of boiled ones.
Ingredients
- From the Farm Share: Idaho Potatoes, Dill, Cucumbers
- From the Fruit Box: Lime (juice)
- Pantry Staples: Olive oil, Greek yogurt (or sour cream), garlic powder, salt, and black pepper
Instructions
- Roast the Potatoes: Preheat your oven to 400°F (200°C). Dice the Idaho Potatoes into bite-sized cubes, toss with olive oil, salt, pepper, and garlic powder, then roast for 25–30 minutes until golden and crispy. Let cool slightly.
- Make the Dill-Cucumber Sauce: Fine-dice or grate half a Cucumber and squeeze out excess moisture. In a bowl, combine 1/2 cup Greek yogurt, fresh chopped Dill, Lime juice, salt, and the grated cucumber.
- Assemble: Toss the warm roasted potatoes with the cool yogurt sauce and serve immediately.
2. Summer Fruit & Arugula Salad with Lime Vinaigrette
A sweet and savory salad that pairs peppery greens with ripe summer fruits.
Ingredients
- From the Farm Share: Baby Arugula, Green Leaf Lettuce
- From the Fruit Box: Washington Cherries (pitted & halved), Blueberries, Eastern Shore Honeydew (cubed), Lime
- Pantry Staples: Olive oil, honey, crumbled feta or goat cheese (optional), sliced almonds or walnuts (optional), salt
Instructions
- Prepare the Greens & Fruit: Mix Baby Arugula and chopped Green Leaf Lettuce in a large salad bowl. Top with pitted Washington Cherries, Blueberries, and cubed Honeydew melon.
- Make the Lime Vinaigrette: Whisk together 3 tbsp olive oil, 1 tbsp fresh Lime juice, 1 tsp honey, and a pinch of salt until emulsified.
- Toss & Serve: Drizzle the dressing over the salad just before serving, and top with cheese or toasted nuts if desired.
3. Chilled Honeydew & Cucumber Refreshing Soup
A cool, sweet, and tangy chilled soup perfect for hot summer afternoons.
Ingredients
- From the Fruit Box: Eastern Shore Honeydew, Lime
- From the Farm Share: Cucumbers, Dill
- Pantry Staples: Salt, olive oil, water or coconut water (optional for blending)
Instructions
- Blend: Blend 3 cups diced Honeydew melon, 1 peeled and seeded Cucumber, juice of 1 Lime, and 1–2 tablespoons of fresh Dill in a blender until completely smooth.
- Chill: Chill in the refrigerator for at least 1 hour.
- Garnish: Serve chilled, garnished with extra fresh Dill, a drizzle of olive oil, and a few whole Blueberries on top for contrast.
