Roasted Acorn Squash & Turnip Mash with Garlic
- Ingredients: 1 Acorn Squash, 3–4 medium Turnips, 4 cloves Garlic (peeled), 2 tbsp butter or olive oil, salt and black pepper to taste.
- Instructions: Halve and seed the acorn squash; roast cut-side down at 400°F (200°C) for 35 minutes until soft. Peel and cube the turnips, then boil with the whole garlic cloves in salted water for 15–20 minutes until fork-tender. Drain the turnips and garlic, scoop out the roasted acorn squash flesh into the same pot, and mash everything together with butter, salt, and pepper until smooth and warm.
Crispy Potato, Celery, & Apple Hash
- Ingredients: 2 Russet Potatoes (diced), 2 stalks Celery (sliced), 1 Gala or Ginger Gold Apple (diced), 2 cloves Garlic (minced), 2 tbsp oil, 1 tbsp fresh Lime juice, salt and black pepper to taste.
- Instructions: Heat oil in a heavy skillet over medium-high heat. Add the diced russet potatoes, cover, and cook for 8–10 minutes, stirring occasionally until starting to brown. Stir in the sliced celery and minced garlic, cooking for another 5 minutes. Fold in the diced apples during the last 3 minutes of cooking so they soften slightly while retaining crispness. Finish with a squeeze of fresh lime juice, salt, and pepper.
