Roasted Vegetable & Basil Salad
Ingredients:
- 1 cup broccoli florets
- 1 cup green beans, trimmed
- 1 red bell pepper, cut into chunks
- 2 heirloom tomatoes, sliced thick
- 3 tbsp olive oil
- 2 tsp balsamic vinegar
- 1 clove garlic, minced
- ¼ cup fresh basil leaves, torn
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Toss broccoli, green beans, and red bell pepper with 2 tbsp olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes, until tender and slightly caramelized.
- Arrange heirloom tomato slices on a serving platter. Drizzle with remaining olive oil and balsamic vinegar.
- Top with roasted vegetables and scatter fresh basil over the top.
- Serve warm or at room temperature as a light main dish or hearty side.
