Roasted Vegetable & Basil Salad

Ingredients:

  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, cut into chunks
  • 2 heirloom tomatoes, sliced thick
  • 3 tbsp olive oil
  • 2 tsp balsamic vinegar
  • 1 clove garlic, minced
  • ¼ cup fresh basil leaves, torn
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli, green beans, and red bell pepper with 2 tbsp olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes, until tender and slightly caramelized.
  3. Arrange heirloom tomato slices on a serving platter. Drizzle with remaining olive oil and balsamic vinegar.
  4. Top with roasted vegetables and scatter fresh basil over the top.
  5. Serve warm or at room temperature as a light main dish or hearty side.
